First off, remember, it has to be dark, meaning a higher percentage of cocoa.
A good quality bar is at 70% cocoa. The higher in percentage, the higher the antioxidants, but also the more bitter the taste.
Secondly, dark chocolate should not contain any milk.
Thirdly, make sure to avoid sugar, trans-fats, and of course any other additives.
Fourthly, check for lecithin. This is common additive made of soy, better to avoid it as it causes allergic reactions.
Finally, check for alkalis content. This is a chemical that cocoa is treated with to modify its color and reduce bitterness. A more natural chocolate bar is always better, and #bitter.
